Purple Bean Salad

I'd never had purple beans before. I saw them at the farmers market where a friend of mine was buying some. I asked and she told me that they taste just like green beans, and in fact turn the same color green when you cook them. Well what would be the point of that? So I knew I needed to get some, and I knew I couldn't cook them. I decided this would be a perfect time to use some of the chive blossom vinegar. The Local Farmers Market (Finally)

I'm lucky enough to live near the West Side Market. As good as it is though, the produce mostly isn't locally grown. So I've been looking forward to the local farmers market, which sets up Friday night in the local community center parking lot.
