Loaded potato skins are great, but bigger ones can be a little much for an appetizer. These are bite-sized, easy to share, and oh by the way they’re crazy delicious.

I won’t lie, there are some pretty good pre-made sauces you can get for about what it will cost you to make this. But if you’ve ever come home to the smell of sauce that’s been simmering all day, you know that a jar just can’t capture that.
Lately I’ve been doing my sauce the same way every time: saute some onion, add pesto, add tomatoes, etc. For this version, I wanted to go really simple. Everything in it can come out of your pantry, and it takes about 5 minutes total hands-on time. (Not counting making the meatballs.)

You can really put a lot of time and effort into making meatballs. I like when a restaurant does something special with them, but if it’s my work we’re talking about, “easy to make” seems to make them taste a whole lot better.

Ask your parents (or grandparents) about the ice-cream shops they went to when they were teenagers. The toppings didn’t all come out of pump cans, they were made right there from the same ingredients you would use: cocoa powder, sugar, milk, vanilla. This recipe will bring them back to their youth, and make you nostalgic for a time you never knew.

I usually think of chowder as a cold-weather dish. During summer when I can get fresh corn, I like it on those cool nights after it rains. I know it’s not really cold, but when it drops from 95° to 80° in a few hours, it sure does feel like soup weather.
