If this isn't the least-precise recipe you've ever seen, it probably wins the title among things I've posted here. The reason is I've finally really accepted that there is no single perfect chili recipe. I seem to be a steak snob. The last time I made steak fajitas I finally got them "right". They had to have the cilantro and lime juice. That what I had been missing, that really made them taste like they do at all the Mexican restaurants. Well, I forgot to get the lime. And I thought I had cilantro, but I didn't. Pico de gallo is not salsa. It looks like mostly the same ingredients, and it is. But the proportions are completely different. This is not a sauce -- salsa is just the Spanish word for sauce, after all -- it's more like a salad. Chicken Nachos with Mango Salsa

I'm pretty sure my grandmother never ate nachos, much less made them. And I'd be willing to bet she never saw a whole mango. But this recipe hits all the important points: it's all from scratch, with fresh ingredients, and it tastes at least as good as it looks.
