When you cook from scratch, you're eventually going to notice that not all ingredients are created equal. Fresh tomatoes from your backyard are not like the perfectly-round, perfectly-red, perfectly flavorless ones at the grocery store. Some brands of flour rise more than other brands. Braised Corned Beef — a promising idea

As I was buying my corned beef brisket for St. Patrick's Day this year, it occurred to me that it was, after all, a brisket. And usually I would braise a brisket. Why does corned beef have to be boiled? Turns out, it probably doesn't. As a first attempt this was surprisingly good. It suggests braising may give you a much more flavorful meat. I've got a little confession to make. Until last week I'd never had brussels sprouts. No, this wasn't a case of childhood resistance hanging on way too long. I'd just never had them put in front of me. I didn't know, until my wife said we should get some, that they were miniature cabbages.
