Just a quick note about how I did one of the ingredients for my twice baked potatoes. I've done bacon bits before, but that was with prosciutto. I expected the bacon would have a lot more fat, but it turns out he bacon ends I used have no more fat than the prosciutto did. If I'm going to fall for some great marketing -- and know that I'm falling for it the whole time -- I sure better make something that's worth losing my self-respect. So this time I didn't take a shortcut and put the slow cooker on "Hi" for three hours. This one gets the full 7-plus hours it needs to be fork tender.
