For the last year I’ve been buying avocados by fours and sixes almost every week. They mostly end up as guacamole. I started out with a bunch of ingredients, but the recipe kept getting simpler and simpler until I ended up with this.
I still like an occasional change of pace but it always starts from this basic recipe, with additions depending on my mood and what I’ve got handy.

My whole life I didn’t think I liked guacamole. Then I tried some that was made from scratch and changed my mind. Now I probably make on average 2-4 avocados per week worth of guac.

Sometimes you do things for other people that you wouldn’t do for yourself. For me, Scotch eggs fall into that category.
If I’m the only one eating it, I’m perfectly happy having sausage and eggs sitting next to each other. If you want a fancy hors d’oeuvre, though, this does look pretty cool and isn’t all that hard to do.
