
I mentioned yesterday the mutant zucchini that the bread was made from. I should have expected it after seeing the size of the plants. But this is just ridiculous.

And the season isn’t even over yet. I wonder if zucchini bread freezes well …

it freezes beautifully. wrap each loaf tightly in plastic wrap, then seal in foil. i grew up eating moist, delicious zucchini bread all winter long.

Hey Drew, we got zucchini like that often from our garden when I was a kid. Zucchini bread does freeze well, but so does just plain shredded zucchini. Just shred, drain, freeze, and say hello to zucchini bread, zucchini pancakes, zucchini friggin’ everything.
P.S. I actually had never seen zucchini smaller than that until I was about 18. I thought there was something wrong with all the zucchini in the grocery store until my mother explained we had a freak garden.
sweet bird beat me to it, but I was definitely going to suggest freezing shredded zucchini. Then you’re not locked into zucchini bread, good as it is.
Sweet Bird, I know what you mean. My mother’s garden used to do freak cucumbers.
Jenn, shred and freeze sounds like the way to go. I’ll pack it in “one loaf of bread” portions, so I can easily make it fresh throughout the winter.
I don’t want to see anything that big in my garden. I prefer my vegetables to be small and easily subdued.

I don’t know about freezing the bread, but I have canned (bottled) bread, now that is really kewl.

That’s a great question. And the answer is … I haven’t got a clue. I’ll have to weigh the next one and do some math.
Better yet, is to shred and freeze the zucchini itself in baggies, portioned for a batch of fresh bread
