Pancakes are not supposed to be this easy. Three ingredients? Seriously? And two of them are leftovers?
Yup, seriously.
Ingredients
1½ cup leftover mashed potatoes
1 extremely over-ripe banana
1 egg
Directions
Add the banana and the egg to the potatoes and mix until there are no lumps. (Click any picture to see a bigger version.)
Melt a little butter in a skillet or flat pan over low heat.
Dammit, that makes four ingredients doesn’t it? So sue me.
Pour three or four small pancakes into the melted butter.
Turn them over when browned on the bottom and bubbles are coming through the top.
Cook until browned on the other side.
I said to have the pan over low hat didn’t I? Yeah, a little lower than what I did.
Serve with syrup, or butter, or fruit, or … and this will sound weird, but remember this is almost a hash brown … with ketchup or hot sauce. Seriously.
And that’s it.
