Er, Han shot first. But I try to keep my SW-ing to a minimum on respectable forums.
I live on the Central Coast of California and grew up in Santa Maria — home of Santa Maria style barbecued tri-tip over red oak. Can’t see anything else as authentic, although I may like it fine. But I use lightly charcoaled wood in my little kettle bbq, most of the time, just because it comes in smaller chunks and I don’t like chopping wood.
I like the taste of charcoal, but the ease of gas. We bought a Weber gas grill on Craig’s List last year so we could do a LOT more grilling to keep our non-air conditioned house cooler in the summer months. It’s fast, easy and one of our best purchases in my opinion. It was used less than a dozen times and we gave $100 for it so I’m extremely happy with it. It’s so quick to start it up and toss a couple chicken breasts on for a salad or a few shrimp skewers.
I live in santa maria as well and I was raised on the best bbq around. I have never (even with all of the steakhouses I have been to) had better bbq than from my dad. He uses wood only, the old fashioned TP made with sticks, newspaper underneath and light it up, Slowly adding wood until the fire gets bigger..works every time.
I feel like anything else is cheating.
Has anyone seen “The Big Green Egg” yet? I haven’t stopped at the dealer to ask its cost yet, but the write up on it was great…
My preference, by the way, between gas or charcoal is the latter but I have the former.
