For the last year I’ve been buying avocados by fours and sixes almost every week. They mostly end up as guacamole. I started out with a bunch of ingredients, but the recipe kept getting simpler and simpler until I ended up with this.
I still like an occasional change of pace but it always starts from this basic recipe, with additions depending on my mood and what I’ve got handy.
Ingredients
2 avocados
juice of ½ lime
1 teaspoon salt
1 teaspoon cumin
1 teaspoon garlic
½ small onion, diced
hot sauce (to taste)
Directions
A note about color:
For years I couldn’t make myself try guacamole. I’m pretty sure the color had a lot to do with it. That bright green just seemed so artificial – though for some reason I had no problem with Froot Loops™, go figure.
Anyway, as you can tell from the picture above this didn’t come out real green. The hot sauce gives it kind of an orange-y tint, which seems to really turn off people who do like guacamole, but doesn’t bother me because I didn’t grow up eating the green stuff.
Moving on …
Pit and peel the avocados. (Click that link to see how easy it is.) Put them in a heavy-duty mortar and pestle.
Add the lime juice and chop up the avocados a little.
Mash the avocados until fairly smooth. (A few chunks won’t kill anybody.)
Add the salt, cumin and garlic and stir.
Add the diced onion and hot sauce and stir once more.
And that’s it.
Wait … I said I sometimes add more to this, right? Here’s some ideas:
- Diced tomato (scoop out and discard the seeds first)
- Tuna fish … yes, tuna
- Diced chicken
- Cream cheese
- Sour cream
